黄檗山萬福寺は、1654年に中国から招かれてやってきた陰元禅師によって開かれた黄檗宗の本山で、「普茶料理」もまた、陰元禅師によってもたらされました。

中国式の精進料理である普茶料理は、本来4名で一卓を囲む形式です。食材手配の都合で5日前までには予約が必要と言われることが多かったのですが、ここ萬福寺でも最近は3日前の午前中に予約を入れて2名からお料理をいただけるようになっています。

そして、「普茶弁当」に至っては1名からでも予約可、更に参拝当日でも数量限定で予約を受け付けてもらえることもあるとか。以前よりずいぶんハードルが下がり、普茶料理がいただきやすくなりました。

P1080732萬福寺でいただけるのは、3,000円の普茶弁当と、5,000円、7,000円(いずれも税別)のコース料理のみ。価格が上がるごとに品数ともどき料理の種類が増えるようです。

(ご注意!萬福寺内で普茶料理をいただくには、入山料500円が別途必要です。)

ビール等の注文は可能です。

写真のお皿に盛られているのは、それぞれ4人分です。
ということは、基本的に一人1個ずつの取り分け。

一皿に一品載っているメニューだと、それほど量が多いわけでもなく、お皿がでてきた時点で誰かがさっさと4人に分けていただくほうがよさそうな感じです。
少しずつ味わいながら、時間をかけていただきます。

P1080734中国風にしては案外と量が控えめかなという印象を持つのもつかの間、次々と運ばれてくる料理を愛でながらいただくうちにちょうど良いくらいになってきます。これぞ「腹八分目」というのでしょうか。

普茶料理は、おもてなしの料理としてお客さまに喜んでいただけるよう、華やかさも演出されています。

一見、かまぼこかなと見受けられる料理も、実は山芋で作られているなど、まさに「(魚)もどき」料理です。
本物そっくりだけれど素材は全て野菜類。とても手が込んでいます。

普茶料理を出すお寺ではどこでも基本のメニューは共通していますが、日本の精進料理と比較すると器の自由度が高くなっています。
使用されている器の雰囲気はいただくお寺によって全く異なるのです。器が料理に華を添えています。

また、精進料理というと「味が薄い」イメージをお持ちの方もいらっしゃるのですが、実際には全くそのようなことはありません。

P1080736特に普茶料理は中国の影響もあるのか全体的に味付けがしっかりしているところが多いと感じます。

宇治周辺では萬福寺の他、萬福寺の塔頭や元塔頭の白雲庵宝善院
天真院(銀杏庵八合庵(青年文化研修道場)、伏見の海寶寺でも普茶料理がいただけます。いずれも2名もしくは4名からの事前予約が必要です。

また、萬福寺総門前にある萬松閣ー京楽膳萬ーという料理店では、お昼のみ一人から普茶弁当(税別3,000円)をいただくことも可能です。どんな器に盛られて出てくるのか楽しみですね。

Kanga-an 閑臥庵

贅沢な空間でいただく京懐石普茶料理

静かな住宅街にある黄檗禅宗のお寺の門をくぐり、広い玄関で靴を脱ぎ、部屋に案内されて襖を開けると、そこには料亭のような佇まいの空間が広がっています。

2008年に大幅な改修をしたという部屋は、漆の赤と黒の色を基調にしたモダンな和の空間ですが、部屋の中央に広いダイニングテーブルとアールデコ風のしっかりした椅子が、昭和初期の雰囲気を醸し出しています。

夜の料理は「竹膳」「朱膳」「黒膳」の3種類で、それぞれ9000円、
14000円、18000円ほど。他の黄檗宗のお寺と異なり、2人から予約できます。また昼には、上記のほか5500円の「紫膳」、10人以上で予約すれば3500円の「普茶弁当」もお願いできるようです。

コースの内容は、まずお抹茶とお菓子をいただいたあと、基本的に懐石料理と同様、煮合わせ、揚げ物、浸しもの、酢の物、汁物、ごはん、漬け物、水物があり、それに胡麻豆腐やもどき料理が加わります。私たちがいただいた朱膳では毬栗(イガも食べられます!)や鰻のもどき料理など手の込んだ料理がでました。油を使った料理が多いとのことですが、全く油のしつこさが感じられず、とてもおいしくいただきました。また、見た目も美しく、ボリュームも満点です。

庭に面した部屋であれば、春は桜、秋は紅葉がライトに照らされて緑の庭に浮かび上がった、幻想的な世界も楽しめます。

食事の友には「般若湯」(酒)が定番なのですが、ここではギネスビールやウイスキーも注文可能です。

普段使いにとはいきませんが、特別な機会のためのとっておきの場所になること間違いなしです。

Kanga-an is a Buddhist vegetarian restaurant, housed within a Buddhist temple, and situated within a quiet residential area, just north of the city center near the Kuramaguchi Subway Station.

Remove your shoes as you pass through the wide, spacious entrance, and someone will guide you into a private chamber of your own, with windows overlooking a garden outside. The restaurant was renovated in 2008 and the style of the rooms is Japanese: tatami mats in the newest fashion, high tables with art deco chairs, etc., done quite elegantly.  The atmosphere recalls something out of the late Taisho Era (early 1920s).

For dinner there are three different course menus, called "takezen," "shuzen," and "kurozen." Each is available in varying sizes, priced at 9,000 yen, 14,000 yen, and 18,000 yen. Unlike other Buddhist vegetarian restaurants, you can make reservations for as few as two people, not the usual minimum of four people (though you cannot go here alone).

For lunchtime, however, you can choose from five courses, the three already named plus murasakizen, for 5,500 yen; and if you are in a group with 10 people or more, you can order a kind of special box lunch called "fucha bento."

In any case, the dinner begins with matcha (powdered green tea) and sweets. As with kaiseki-style dinners, the course menus here include such items as boiled vegetables, tempura, miso soup, rice, pickles, and fruit. In addition we were served goma-dofu (sesame infused tofu), and vegetarian dishes that mimicked eel and chestnuts (the spines of the latter were made from fried somen noodles).

The cooking here is not at all oily, even the tempura: completely delicious. The food is prepared in an ornate, decorative style, and is quite beautiful. The portions are generous; you will leave fulfilled in every respect (aesthetic and culinary alike).

If your room faces the garden, you will see cherry blossoms in spring, and colorful foliage in autumn (all complemented by discreet lighting). The traditional sake is on offer, but here you can also order beer (even Guinness), wine, and whiskey. Schedule your visit for a very special occasion.

Kodaiji Ikkyu-an 高台寺 一休庵

霊山観音へ行く道の途中、八坂の塔と高台寺の中間にある、普茶料理の店で、大正時代から続く老舗です。普茶料理とはいえ、皿盛りではなく、懐石のように一人前ずつでてくる料理は、普通の精進料理よりさらにシンプルに見えます。

豆乳蕎麦メニューは コース料理のみで、夜は3種類の中から選びます。(税込み\4000〜\8000くらい)

一般的にイメージする手の込んだもどき料理のようなものは出てきませんでしたが、この豆乳ソバ(Soy milk noodle) と ナス田楽が特に気に入りました。


決してリーズナブルとは言えませんが、この種の店にしては夜も営業していて、しかも予約なしでも空席さえあれば入れる、ベジタリアンにとっては貴重な一軒。

夜は玄関周辺がライトアップされて、幻想的な雰囲気を醸し出しています。
周辺には桜の木もたくさんあり、桜の季節に是非もういちど訪れたいお店です。

This is a Chinese Buddhist restaurant, which has been in operation since the Taisho era (1910s & 1920s). It stands along the way to the Ryozan-kannon (a statue of the Buddhist Goddess of Mercy), in between Yasaka-no-to(Yasaka tower ) and Kodai-ji. But unlike typical Chinese Buddhist cuisine, this is served in the Japanese “kaiseki” style. And the dishes themselves are much simpler than what you might expect from traditional shojin-ryori cuisine. 一休庵玄関

The fare is strictly “course-menu,” not a la carte.
In the evening diners may choose from three different courses, priced from 4,000-8,000 yen. Do not expect to see fake “fish” & fake “meat” dishes, as you might in some Chinese Buddhist restaurants.

In the photo is a soy-milk soup with noodles. We also had a fine dish of eggplant with miso.

The price is not exactly cheap, but you can usually stop by without reservations, and it’s open at night. A good choice for vegetarians.
In the evening, the front gate  is lit-up, providing a lovely
atmosphere. Nearby stand a number of cherry-blossom
trees; visit during hana-mi season if you can.
